Last night I was a little bored and hungry and decided to make a light snack that was a little different by Barbadian standards. I decided to make some Tuna Croquettes.
For this recipe you will need:
1 can of tuna, drained
3/4 cups of bread crumbs
2 eggs, beaten
2 green onions
2 tsp. mustard
1 tsp fresh lime/lemon juice
1/2 tsp salt
1/4 tsp. ground black pepper
1/4 tsp. cilantro
1/4 tsp. parsley
oil for frying
1/4 cup sweet corn
1/4 cup Parmesan cheese
1/4 cup potato, cooked and mashed
In a medium bowl, place the tuna, bread crumbs, eggs, onion, mustard, lime juice, salt, pepper, cilantro and parsley.
Mix until well combined. If the mixture looks to dry, this is where you would add the mashed potato until the mixture comes together.
Divide the mixture into 8 round patties.
Heat enough oil to cover the bottom or your skillet or frying pan.
Add the croquettes and cook until they are golden brown.
Remove and place on a paper towel covered cooling rack to rest for 2 minutes before serving.
These croquettes can go well with a dipping sauce of your choice.
